My kids look forward to getting a “good breakfast” on the weekend. Before school in the morning, we do well to pack some dry cereal in a plastic baggie to eat in the car.  On weekends, though, I turn on the stove and make a better effort.  This week, my son requested french toast. It was a great opportunity to try some Nielsen-Massey holiday flavors!

To give the traditional French toast a more grown-up flair, I used a touch of Nielsen-Massey pure almond extract.  This balanced the sweetness, developing a richer flavor against the bready goodness.

I made a second batch of French toast egg dip, this time using just a touch of Nielsen-Massey Madagascar Bourbon Pure Vanilla Extract.  You won’t believe how delicious this vanilla tastes!   The bread wasn’t saturated in the egg; I barely brushed it on so that the toast would have a lightly browned coating but didn’t taste overly sweet.

We had some pre-sliced Boar’s Head deli turkey leftover from last week’s lunches, so I heated some up in the same pan that cooked the French toast.  Next, I liberally coated the pan with cooking spray, and fried the eggs until just barely firm.  These goodies topped the French toast, along with a few slices of fresh avocado to make it even more delectable.  You could add some Parmesan shavings if you have them (we’re out of parm, sadly.)

This savory version of French toast makes the perfect grown-up breakfast. It was so delicious.  Use this recipe with your leftover Thanksgiving turkey, or prepare it as a Christmas Day brunch dish.
