When my kids hop in the car, the first thing I hear is, “I’m hungry!”  Sometimes it’s frustrating to try to fill those bottomless pits, but I try to stop and remember how very blessed I am.  Many of the students at my school depend on the cafeteria breakfast and lunch because they don’t have food at home.  Our school sends home snacks and meals for the kids to prepare on the weekends, but I worry about those little ones when school is out.  On the days that we stayed home because of snow, those children must have suffered from hunger.  Sitting in a classroom and trying to focus on history or math is tough when the stomach is growling.  All too often, there are children who must battle that problem.  Therefore, I’m so grateful that I can feed my children when they ask for something to eat. My husband and I have jobs that enable us to satisfy that hunger with delicious, nutritious meals.  Not every parent is able to fill those hungry beaks, yet the rest of us can help to bridge those gaps through our regular shopping trips.  You see, Feeding America Food Banks plan to donate up to 75 million meals based on the purchases we make at Walmart.  I used two ingredients from  participating brands  to make a family favorite – Easy Italian Chicken.  This recipe doesn’t just fight hunger at my house; it also helps to provide two meals at Feeding America!

Kraft barbecue sauce and Italian dressing are the star ingredients for this meal.   One purchased item equals one meal donated, so it was easy to multi-task with this meal.  You can also register giving ($1, $3, and $5).  Just doing a few social shares can help, too!!  One social share provides one meal.  It’s such a simple way to make a difference!  Watch the real-time giving tracker to see how many meals have been donated so far.

In addition to the Kraft barbecue sauce and Italian dressing, you’ll need chicken breasts or tenders (I used 3 pounds…..and we still we didn’t have any leftovers!).  I typically use a bit of local honey in this recipe, but I grabbed the slow-simmered Sweet Honey barbecue sauce. It saved me a step!

Use a bit of the oil from the dressing in the bottom of a pan.  Heat the stovetop to medium-high.  Add enough barbecue sauce to cover the bottom of the pan.  I used a spoon to spread it around.   I use the barbecue sauce because it adds a nice flavor, but also helps the chicken to achieve a lovely brown color.

Fill up the pan with chicken!  Don’t be afraid to crowd the meat.  It will cook down, and you’ll have plenty of room.  Allow the chicken to cook for about 10 minutes, while you stand nearby.  Go ahead and help the kids with their homework, or throw in a load of laundry.  When you come back, the barbecue sauce should be starting to glaze and bubble.  Turn the chicken over so the other side can start to brown.

Now, add about half the bottle of Italian dressing.  Kraft dressing has a bright, sunny flavor that makes this dish taste like music in my mouth!  I pour the dressing right on top of the chicken.  I don’t even stir.  I told you this was easy!

While the chicken finishes, I start the side dish.  I love to serve this chicken with brussel sprouts.  By chopping just a bit of bacon and browning it with steamed brussel sprouts, the dish looks simple and rustic.  It’s delicious!

Now that the brussel sprouts are done, the chicken is ready.

The chicken should have some nice glazed areas from the browned sauce.  You can even use a bit of the sauce to drizzle over the chicken if you wish.  Why eat indoors tonight?  Take this meal outside and enjoy the beautiful spring weather!

    • Just chicken for this recipe! If you want to add a bit more honey, you can.

      There are so many items on the Fighting Hunger list, though. You could build many meals out of them!

    First off, great recipe: easy to do, known ingredients, and sounds very flavorful. Secondly, wow on your post. Thank you for bringing this to our attention. Being a teacher I’m sure you personally see the hunger in kids eyes. I help with the backpack and weekend snack programs, but I’m ashamed to say I didn’t put as much thought in snow days. It is great that companies are helping and getting us all involved.

    I was amazed at how many million meals have been donated. That’s wonderful, and I hope the companies and all of us keep it up even after goal is reached. This is such an important issue and problem. Hunger affects so many, and we don’t even think about the extinct of the problem. Good for everyone on working together to help.
