Crepes made with Tahitian Pure Vanilla Bean Paste from Nielsen-Massey

I love getting crepes, both sweet and savory, when we go to a restaurant.  So why was I so intimidated by making crepes at home?  It really was as easy as making pancakes!  Just find a recipe online and give it a try.  Instead of using regular vanilla, consider using Nielsen-Massey Tahitian Pure Vanilla Bean Paste.  It won’t thin the batter, but adds a delicious hint of flavor.

The vanilla “paste” is packaged like liquid vanilla, so I was curious to see what it would be like.  It’s very thick, similar to molasses or honey, so you can easily control how much you use.  Has anyone else had a vanilla “oops” spill, pouring too much in when making a recipe?

I knew going in that the crepe batter needed to be thin — thinner than pancake batter — so I used the stick blender.  This thing is so super helpful and simple to use!  As you can see, I mixed everything in a cereal bowl.  Can’t do that with a regular hand blender (at least, I can’t!) without making an epic mess.

The crepes turned out so good.   I can’t believe I waited so long to try these!  Next time, I’ll try a savory recipe.
