The $110 pot of soup that we never ate

This pot of soup cost about $110 today.  And my family never even tasted it.

So here’s the story.

This morning my daughter requested one of her favorite meals, ham and potato soup. She calls it “Saturday Soup” because I tend to make it on Saturdays when I’m feeling lazy and don’t want to spend a lot of time cooking.  On the way home from work, I stopped at the store to pick up the ingredients.  The total bill was about $21.

I was excited to get home earlier than normal today.  It was kind of a gloomy, drizzly day so the soup was going to be a perfect meal.  My kids begged to help make it so I found jobs that each could do—-my son was pouring the liquids in the pot, while my daughter peeled the potatoes.   Just as we were finishing up the first step of the recipe, I said, “I think we need one more potato.”   So being the sweet girl that she is, my princess peeled one more potato.  Except she also got her fingertip peeled in the process.   OUCH!    She was a real trooper, but it was obviously not an injury that I was going to be able to patch together myself.  I was actually concerned that she might need stitches, so off to the ER we went.   We had an $80 copay that they reduced to $64 since we prepaid it.   Nice to get a savings there, right?   And turns out that she didn’t need stitches, just some really expensive superglue and gauze.

After two hours in the emergency room, I did not have the energy to even think about making supper (and the soup didn’t sound so good after all).  I stopped for fast food and gladly paid $25 for chicken nuggets and tacos.

The unfinished soup is sitting in my fridge and my kids are tucked into bed.  Thankfully we have full tummies, a warm house to sleep in, and if a cut on a tiny finger is enough to remind me of my blessings, I’m a lucky woman.

Here is the soup recipe if you’d like to try it. I hope you have better luck than we did.  I took this picture before we added in the rue, which makes the soup all creamy delicious.  If you’re feeling especially spry, add a bit of swiss cheese to melt on the top. Yum, yum!

3 ½ cups peeled & diced Yukon gold potatoes

2 garlic cloves, chopped

1 cup diced cooked ham — I just buy the boneless ham at the grocery and carve off the sides, then chop it up.

3 ¼ cups water

salt and pepper to taste

1 chopped onion

5 tbs butter (can use a little less if you want.  I don’t want.)

1/3 cup all-purpose flour                                           

2 cups milk — we use skim but it’s even better if you use 2%                                                             

2 cups chicken broth (or 2 chicken bullion cubes, plus 2 cups water)

Combine the potatoes, onion, garlic, ham and water in a stockpot.  Bring to a boil then cook over medium heat until potatoes are tender (about 10-15 minutes).  Stir in the chicken broth, salt, and pepper. Cover this for a few minutes while you prepare the rue.

In a separate saucepan, melt butter over medium heat.  Whisk in the flour a little at a time and stir constantly until thick.  It takes about 1 minute.  Slowly stir in milk a little at a time & continue to stir so that no lumps form.   Simmer over medium-low heat until soup is thick, it will take about 5 minutes.  Stir it frequently.  Once it’s thick, add the milk mixture into the stockpot.  Give it another healthy stirring and cook soup until heated through.  Serve immediately.  I don’t remember where I got this recipe but it’s a keeper!
