Scenario 1: Your kids announce that they invited their teacher to come for a home visit.

Scenario 2: Your sister asked you to bring an extra dish to the family dinner….10 minutes before you were planning to leave the house.

Scenario 3:  It’s 8:00 PM and you suddenly remember that you’re supposed to take a dessert to the church luncheon.

We’ve all been there.  It’s the last minute of an already tight time-crunch and you realize that you’re sunk.  Keep a Marie Callender’s dessert in your freezer for a moment such as this.  The delicious goodness of a homemade dessert is there; just add a personal touch to make it completely yours!  Read on to see how I added a special note of flavor to Marie Callender’s pumpkin pie by topping it with a homemade eggnog whipped cream.

I’ve never tried making my own whipped cream before, but there was a whipped cream from my past that I couldn’t get off my mind.  A few years ago, one of my students brought me a delicious piece of cake that was topped with eggnog whipped cream.  She told me how to make it and I’ve always wanted to give it a whirl.  This seemed like the perfect opportunity!

Marie Callender’s pumpkin pie is delicious.  My mom has been serving this for years at our holiday gatherings. The crust is seriously flaky and buttery, like a good pie crust should be.  Do I have crust crush?  Absolutely!  The pumpkin filling is creamy and delectable, yet not overly sweet.  Sometimes pies are too sugary for me.  Marie Callender’s pumpkin pie was densely rich with just the right touch of sweetness.  I wanted to add the smooth texture of cream but didn’t want something like ice cream, which might overpower the pie.  That’s when I remembered the eggnog whipped cream!    I already had all the other ingredients in my fridge waiting for a holiday dinner, so it was easy as pie to whip this up.    Pumpkin Pie with eggnog whipped cream #HolidaySecrets #sponsored by Marie Callender's -- savingsinseconds.com

The pumpkin pie must be baked for 70-80 minutes and allowed to cool before topping it with the whipped cream.  Try putting it in the oven before you start baking your other dishes so that the pie can be set aside.   About thirty minutes before you’re ready to serve your meal, pop the mixing bowl and whisk into the freezer.  I used an immersion blender; you could also use a hand-held mixer.

For me, it’s not Christmas without one good cup of eggnog.  That’s just about all I drink, though.  It was great to turn to this recipe to make sure that this delicious drink didn’t go to waste!

Allow 10 minutes or so to assemble the ingredients and whip the cream.   You’ll need:

1 cup heavy cream
1/2 cup eggnog
2 tbs white sugar
1 tsp nutmeg
1/2 tsp vanilla

Simply pour these ingredients into your chilled mixing bowl and start blending.  It’s easy enough that a child could do this step for you.  To save myself a little clean-up time, I placed the mixing bowl right on top of the cookie sheet that the pie was baked upon.  This way, my mess was minimized.  Once I finished, I just moved the whole thing and had a clean stovetop!

If you haven’t made whipped cream before, you might doubt yourself midway through.  I kept thinking I must have done something wrong.  Press through this uncertainty!!  Just when you think about giving up, the soft peaks will start to form.  It took my cream about 10 minutes to be ready.
Instead of serving my pie in traditional wedges, I decided to portion the pie in pretty mugs.  This little detail makes a dessert extra-special.  Top each delicious pumpkin pie slice with a generous dollop of eggnog whipped cream; sprinkle with a dash of nutmeg for color.

Instead of slaving over every last detail of your family’s meal, let Marie Callender’s become part of your tradition this year.  Marie Callender’s has fabulous desserts for all occasions.     They closed our Marie Callenders restaurant and it was so good and I could get a pie there anytime, but our local grocery stores now carry some of the Marie Callender pies and I have gotten the apple pie and it is good, you did great making your topping.
