Celery CAN taste good. Who knew?!

My kids and I returned from a trip on Saturday. I hated having our family separated on Thanksgiving; one thing that smoothed it over was getting to enjoy the lovely leftovers that were in the fridge. My sister made a delicious potato casserole that was still waiting for me. Look at the glory of this plate.

There’s probably some kind of blogger rule about taking a picture of food on a paper plate.  It can’t be helped…..You just can’t put on airs and dress up this casserole.  Which, might I add, is one of the finer points of this cuisine.  This dish represents downhome goodness at its best.  I ate at least three servings on Sunday. Earlier in the day I texted my sister to say thanks for the yumminess. While I was waiting for my bedtime snack to heat up, I checked my messages and found that she had texted back. Here is what she said:

Sorry that was the bad one I had to make w cream of celery and not cream of chicken w herbs.

Wait, what???? There is even such a thing as cream of celery? And if that’s not bad enough, it’s in this casserole?! She completely blew my mind with this confession.

My response:  I am just not sure what to do with that information.

All my schemas are tousled now. For all my life I thought I hated celery.   Could it be that celery CAN taste good?!   Apparently this only holds true when the celery is cream-based from an actual can.  Oh well.  Now I can honestly say that at least once in my lifetime I ate celery and liked it.

  1. I’m lucky in that myself & my boyfriend both don’t mind eating leftovers at all, we almost never throw away food. I hope that when we have kids they’ll have the same trait, hehe. My favorite leftovers is ham from easter or christmas because then I throw it into scalloped potatoes with ham & onions and its SO good.

    • We love leftover ham, too! We like to mix chopped ham with scrambled eggs and top with swiss cheese. Delicious! I will have to try your scalloped potatoes idea.

  3. Celery is so wonderful to cook with! it is one of my fav root veggies, I saute it with carrots and onions and put it in my stuffing. I love it in my chicken soup, and I eat it after that is cooked!

    • I want to like it. I really do!! Somebody told me that you burn more calories eating celery than you gain in eating it. I’ve often thought that was celery’s only redeeming factor. Apparently if you combine it with sour cream, cheese, and potato shreds it becomes edible to me.

    Celery can be a wonderful addition to your stuffing or tuna. You can even add it to pea salad or pasta salad. I also love it in beef stew. Celery can also make a fine snack. Pair it with peanut butter, cheez whiz, ranch dip, or my daughter’s favorite Salsa.
