Starting the new year with fresh, delicious recipes makes me want to sing. My family easily falls into a menu rut, especially in the winter when none of us feels up to making a decision about meals. It’s so simple to get drive-thru, but we all prefer home cooking. During the school week, it’s a race to get from door to door. The front door of our house, the car door, the school door, and back through the paces again for the evening. Chocolate Covered Cheesecake – camping style!

Now that we’ve had two great camping trip with our new travel trailer, it’s time for me to share some of our experiences. I hope some of you will get to enjoy camping in the northeast Tennessee area, where we have beautiful mountains and stunning sunsets! My son cheerfully declared, “Everything tastes better at the camper!” and I think he’s right. We’ve had fun finding ways to create delicious meals and snacks with the simple ingredients our camper pantry holds.
